Itinerary:

Arrival in Taleggio Valley, passing through the striking gorge, a ravine digged by the Enna creek an affluent of the river Brembo. In the morning visit of a company producing Taleggio and Strachitunt. The first is a square-form cheese of the stracchino family, with fresh-made milk taken from the tired cows (which in dialect is stracch, like the name stracchino) because they come back from the summer pasture or the level pasture.
Only the particular conditions of aging in the cave and the local microclimate give the Taleggio the unique aroma that we find also in the round Stracchino, the Stracchino DOP. This cheese, defined by chef Vissani as “the best in Italy” in a product created mixing the morning and the evening curdle.
At the end, visit of an aging cellar and lunch with tasting of local delicacies.
Following, the possibility to hike for admiring the typical mountain hut with plöde roofs, local slate that here is one of the unique in the world. The landscape has so a singular charm that it worth a visit. It is suggested leaving the area going down the adjacent Brembilla Valley.
